For specialty fish in Stardew Valley, your best bet is to check the unique fishing spots spread across the game. The Glacierfish, for example, is found near the arrowhead island in Cindersap Forest during Winter. Legend, the hardest fish to catch, is available at the mountain lake near the log, but only in Spring on rainy days. Each special fish has its own particular spot and conditions, so keep an eye on the season and weather!

lol just find a guide online, Stardew Valley's got a ton of fish and half the fun is figuring out where to catch them. But if you want a spoiler, the Wiki is your best friend. Don't say I didn't warn you about the spoilers.
