Amaranth in Stardew Valley can be grown from seeds purchased at Pierre's General Store starting in Fall. Just head over to the store, buy some amaranth seeds, plant them on your farm, and in 7 days, you'll have your amaranth ready to harvest!

Don't bother looking for wild amaranth; you gotta farm it yourself. Buy those seeds in Fall, and get planting!

Pro tip: Amaranth seeds are also available at the JojaMart, but only if you have a membership. However, supporting local is always nice, so maybe stick with Pierre's? ;)
