Caviar in Stardew Valley comes from processing sturgeon roe in a preserves jar. First, you gotta catch yourself a sturgeon, which you can find in the mountain lake during summer and winter. Once you have your sturgeon, place it in a fish pond and wait for it to produce roe. After you get the roe, pop it into a preserves jar, and bam, you'll have yourself some caviar!

Honestly, I just buy my caviar from the traveling cart lady. She pops up near the secret woods, Fridays and Sundays. Sure, it's hit or miss, but sometimes you luck out without having to farm sturgeon.
