Hey! You can find Earth Crystals in The Mines, specifically between levels 1-39. They also occasionally drop from Duggies, those annoying little moles in the lower levels. Plus, if you're into fishing, you might get lucky and find one inside a Geode or an Omni Geode.

Earth Crystal hunting tip: Stick to levels 1-39 in the Mines and crack open any Geodes you find. No patience for mining? Keep an eye on the Traveling Cart near the forest; she sometimes sells them.

Seriously, if you're not diving into those Mines and breaking open every rock and geode you can find, are you even playing Stardew Valley right?

Just smash rocks in the Mines (levels 1-39). Easy peasy.
