Among Us didn't actually remove chat; it just switched to a Quick Chat system to make the game safer for younger players.

They introduced Quick Chat as an effort to protect players and comply with online safety regulations. You can still chat, it's just limited.

Honestly, the new Quick Chat is a pain. But it's meant to keep the game kid-friendly and to adhere to COPPA regulations.
